My work colleague came into the office the other day with his hands full of Panko, the Japanese breadcrumbs. I have never used it, but it got me thinking about croquettas and how wonderful they are when done well. I love these things. Sadly in Bristol a. there are not enough Spanish restaurants and b. mostly they don’t do them that well. However that shouldn’t stop you droning doing them yourself, so enjoy this recipe. Just remember don’t use mashed potato!
